Southwest Salad
This southwest salad is a perfect meal for the family because even if your kids are little and don't eat salads yet, they can get all the ingredients separately.
Open Faced Sandwich
My mom did not enjoy cooking, we use to joke that hot counts as a hot meal. This open faced turkey sandwich is best served hot and makes a yummy lunch or dinner. This is another meal that you can easily customize with the toppings that each person in your family enjoys this most.
Taco Tuesday
We do taco Tuesday almost every week. I love it that you can make it just how each family likes it. My hubby likes crunchy tacos, I like to make a salad, and our kids like soft tacos.
Ranch Chicken and Vegetables Sheet Pan
I am all about a sheet pan meal because it means less dishes to clean up. This ranch chicken and vegetable sheet pan is delicious and super simple to prepare which is a win win.
One Pot Pasta with Broccoli and Ham
If your family loves pasta this One Pot Pasta with Broccoli and Ham is another easy recipe that you can customize with your favorite veggies. It is also delicious with peas.
Stuffed Peppers
This recipe for Stuffed Peppers is one of my personal favorites. I love peppers!! I happen to be the only one in my house, if you have members of your family who do not like peppers you can use mixture over rice or pasta too.
Salad
This Tahini Dressing is very simple to make. All you need to do is combine these ingredients
½ cup tahini
2 tablespoons soy sauce or tamari (or coconut aminos)
2 tablespoons white wine vinegar
1 teaspoon maple syrup or sugar
½ teaspoon garlic powder
½ teaspoon finely grated ginger (peel with a spoon, then use fine grater)
3 to 4 tablespoons warm water
Whisk together all ingredients, adding enough warm water to get it to come to a creamy consistency. Store up to 1 month refrigerated.

We learned about this meal idea from hot lunch at school. It is one of our daughter's favorite hot lunches we started to make it at home. They are simple to make. Simple add the following ingredients to your bowl.
- Rice
- Corn
- Salsa
- Sour Cream
The only downside is that rice can take so long to cook and if you are not careful you can burn the pan like I have done a number of times. Thanks to Minute Rice this meal is super simple.
