Welcome summer! There are so many things to look forward to including Vidalia onion season! Each vidalia onion is hand planted, harvested and cured every season for over 80 year. These sweet, juicy bulbs are available within a limited window from April to August. When my box of Vidalia Onions came in the mail there were so many recipes that came to mind. These sweet onions make almost any dish even better.
We eat eggs for breakfast, lunch, snacks and dinner. The only thing I don’t like it having the clean the pan every time and customizing them with everyone’s favorite toppings. These healthy egg muffin cups are the best because they let me customize each cup with everyone’s favorites. And I can meal prep them once and then heat them up when we are ready to eat.
Ingredients for Healthy Egg Muffins
- 6 Eggs
- Vidalia Onion, chopped
- Pepper and Yellow Pepper, chopped
- Cheddar Cheese, shredded
- Ground Sausage

- Pre-heat oven to 350 degrees
- In a greased pan crack one egg in each muffin tin
- Add in your favorite toppings. For me that includes: Vidalia onion, peppers and ground sausage.
- Top with cheese
- Bake for 25-30 minutes and enjoy
