Coffee Chia Pudding
This summer I have been on a new eating plan and the plan introduced me to Chia Seed Pudding. We love overnight oats, but some nights I need a recipe with less ingredients. This Coffee Chia Pudding has only 4 ingredients which makes it easy to make. Chia seeds and chia pudding are now a regular part of my meal planning. They offer so many benefits to you and everyone in your family. Chia seeds are filled with fiber, protein, omega 3 fatty acids, antioxidants, magnesium, and potassium. They can help decrease inflammation, which I needed after all the work we did getting our house ready to put on the market this summer. They also help regulate blood sugar and help keep you full as well as an aid in digestion.
I have experimented with different amounts of chia seeds. The good news is you will learn to be able to eyeball the amount of chia seeds you want. I generally use a 3 to 1 ratio to create a creamy and thick pudding. I generally make the pudding in individual containers, so I generally use 3 Tablespoons of chia seeds and about 1 cup of liquid.

Coffee Chia Pudding
Ingredients
- ¼ cup Seattle's Best Coffee 6th Avenue Bistro Dark Roast
- ¾ cup Greek Yogurt
- 2 Tablespoons Honey
- 3 Tablespoons Chia Seed
Instructions
- Create a cup of Seattle's Best Coffee
- Combine the coffee and yogurt. Stir until it is completely combined.
- Add in honey and chia seeds. Stir completely.
- Seal the container and place it in the refrigerator for 3-8 hours.
