I am always looking for recipes that are a healthier twist on our families favorite foods. My husband loves Fettuccine Alfredo. I have had it for a long time, but thought it would be a fail, boy was I wrong. My husband and I both literally licked our bowls clean. And then my husband was suggesting alternating chicken for shrimp adding in veggies. This recipe for Low Calorie Chicken Alfredo is officially in our weekly rotation.

Low Calorie Chicken Alfredo
Have you ever tried Shirataki Noodles, mushroom noodles? When I first heard about them I thought for sure no one in my favorite would like them. I was wrong. They are such a great replacement for pasta. Just a word of warning when you open the package you may think that they have spoiled, but that is their normal smell.
Combine them with Laughing cow cheese which is a low calorie cheese. It creates the creamy alfredo sauce without the fat and calories of the traditional one.
Low Calorie Chicken Alfredo
Ingredients
- 2 Wedges Garlic & Herb Laughing Cow Cheese or Sonoma Jacks brand
- 1 tablespoon Diced Onions Can use frozen or fresh
- 1 Cup Chicken Broth
- 8 oz Chicken Rotisserie chicken or cooked skinless chicken breast
- 2 Packages Shirataki Noodles I used Miracle Noodles
Instructions
- In a medium saucepan over low heat saute the onions with cooking spray
- Mix the cheese wedges and onions with a few tablespoons of chicken broth.
- Stir and blend adding more broth as needed until cheese is melted and it becomes the consistency of an Alfredo sauce. Keep warm over low heat.
- Cut or tear chicken into bite size pieces and add to sauce
- Bring a pot of salted water to a boil. Rinse the shirataki noodles well in a calendar and drain.
- When water is boiling place the noodles in the pot, cook for 1 minute. Drain the noodles thoroughly and add the sauce to the chicken.
