    Loaded Mashed Potato Casserole is the perfect dish for Summer BBQs or family dinner nights. You can make it as a family style dish or make in individual containers.

    The summer is almost here which means summer BBQs and extra family time. While I love to cook especially during the summer, I love to make super easy recipes. If I am going to get out of the pool I want to be back as soon as possible.

    Loaded Mashed Potato Casserole

    Ingredients for Loaded Mashed Potato Casserole

    - 1 package of Grown in Idaho Roasted Garlic Mashed Potatoes

    - 1 cup of shredded cheese. I like to use cheddar cheese. But you could you cheddar jack as well.

    - 1 cup of bacon crumbled

    - Sour cream to taste

    How to Make Loaded Mashed Potato Casserole

    The secret to making this recipe super simple is there Grown in Idaho frozen potatoes. If you follow me on IG, you know we have been enjoying these potatoes almost daily since we started this partnership. They are that good. They are creamy and delicious and ready literally in minutes. They taste just like you spent all day boiling, peeling and mashing homemade potatoes. They are so good. I will never go back to making them from scratch. They are rich and creamy with real homemade taste.  

    Step 1 is making the potatoes. Depending on the size of the casserole you can portion out the entire bag of medallions or half of the bag. You simply add water and cook. You can make them in the microwave or the stove top. I always make them in the microwave. We used to call my mom Microwave Mom when I was a kid and I feel like that is a name of honor when it comes to making these.

    Step 2 make sure the potatoes are in the dish you what to serve from. This step is all about the toppings you want to cover the top of the potatoes with a thin or thick layer of shredded cheese. And then top with bacon. I like to use bacon that is already in small pieces, but you could also use slices that you crumble.

    Final step is to cook just long enough for the cheese to melt. I used the microwave again, but you could pop it into the oven at 350 degrees.

    Loaded Mashed Potato Casserole

    Ingredients

    • 1 package Grown in Idaho Roasted Garlic Mashed Potatoes
    • 1 cup shredded cheese
    • 1 cup bacon crumbled 4 slices of bacon
    • Sour cream to taste

    Instructions

    • Cook your Grown in Idaho mashed potatoes according to package instructions.
    • Cover the potatoes with shredded cheese. And then top with bacon pieces.
    • Cook just long enough for the cheese to melt. You can heat in the microwave for 2-3 minutes or cover with aluminum foil and heat in the oven for 5-10 minutes at 350 degrees.
    • Top with sour cream and enjoy
