How to make Mint Chocolate Truffles
Tips and Tricks for your ingredients:
- Chocolate - I recommend using a high quality chocolate. You want to use a chocolate bar instead of chocolate chips so you can cut them up into small pieces so they melt easily.
- Types of Chocolate - You can use dark, milk or even white chocolate. Dark Chocolate is perfect is you want a truffle that is less sweet, but still has a rich flavor. If you are looking for an even sweeter version you can use white chocolate as the topping.
- Type of Cream – You need to use whipping cream with 33-35% milk fat. Other types of cream like half-and-half do not have enough fat to be whipped up properly. You can also use regular heavy cream. The high fat content gives the truffle the rich and creamy flavor and texture.
- Peppermint extract - Don't confuse it with mint extract they have a different flavor.
Tips and Tricks for making peppermint truffles
- The most important thing is to not over heat your cream. The goal is to warm the cream so that it can melt the chocolate so as soon as it boils take it off the heat.
- The dip or not. There are some fun ways to custom the truffles you can dip the truffle into dark, milk or white chocolate. Or to make it event easier you can skip this step and roll it in cocoa powder
- Be prepared for a messy step, creating the balls for the truffles can be messy so be prepared, I was sort of shocked just how quickly the truffles melted in my fingers.
- Storing the truffles. Store them in an airtight container with space between the top of the truffle and the top of the container. I made the mistake of putting them in a plastic bag over a bowl and the candy canes got stuck to the baggie. I stored them in the refrigerator because we ended up not dipping them in chocolate. The candy topping would be better stored in a dry cool place.
