    Homemade Cheez-its

    Since Bailey seems to love cooking I have started looking for simple recipes that would be ideal when cooking for a toddler.  I was so excited when I saw this recipe on Glue gun Annie's blog.   These are amazing.  Kurt and I ate almost all of them while Bailey was sleeping.  Opps. Cannot wait to make them again. 

    Ingredients:

    • 8oz shredded cheddar cheese (or your favorite cheese)
    • 1 cup all-purpose flour
    • 4 tbs unsalted butter, softened
    • Salt
    • 3 – 4 tbs ice water

    Directions:

    Step 1: Mix together the shredded cheese, ½ teaspoon of salt and the softened butter.
      

    A recipe with cheese means snacking while you cook.  Win win.


    Step 2: Add in the flour and mix until combined.


    Step 3: With the mixer running, begin adding the ice water and mix until a soft dough forms. Use as much ice water as you need for a dough to form.


    Step 4: Divide the dough in two, form each into a disk and wrap in plastic wrap. Refrigerate the dough for about 30 minutes.


    Step 5: Preheat your oven to 375* F and line your baking sheets with parchment paper.

    Step 6: Roll the dough out on a floured surface into about an ⅛ inch thickness. Cut into 1″ squares with a pizza cutter or fluted pastry cutter, or cut into fun shapes using tiny cookie cutters.  I bought some adorable mini cookie cutters as soon as I saw this recipe.   

       Step 7: Transfer your crackers onto the baking pans and sprinkle them with salt.

    Step 8: Bake for about 7 – 10 minutes, or until they have puffed up and the edges begin to brown. Let cool before eating.   Letting them cool before eating was the hardest part for us.

          I will! We're gluten free, so I'll let you know how they turn out. The gluten free flours now are just as good as regular flour 🙂
