I love mini muffins. I wanted to find a recipe with no added sugar or oil. This recipe is delicious. Click here to see the original post.
- 1 cup white or whole wheat flour
- 1 cup quick-cooking oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1-1/2 cups of mashed fruits or veggies – We used a combo of banana and apple sauce. Looking forward to trying pumpkin next. Also want to try some other fruits like blueberries or peaches.
Step 1: Preheat oven to 350°F. Lightly grease a mini muffin pan with non-stick cooking spray. Set aside.
Step 4: Divide batter evenly among the 24 mini muffin cups. Bake for 12-14 minutes until set.
Step 5: Store in an airtight container in the refrigerator for up to 7 days.
