    Healthy Veggie Mini Muffins

    I love mini muffins.  I wanted to find a recipe with no added sugar or oil.  This recipe is delicious. Click here  to see the original post.

    Ingredients:

    • 1 cup white or whole wheat flour
    • 1 cup quick-cooking oats
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 1 teaspoon cinnamon
    • 1-½ cups of mashed fruits or veggies - We used a combo of banana and apple sauce.  Looking forward to trying pumpkin next.  Also want to try some other fruits like blueberries or peaches.

    Directions:

    Step 1: Preheat oven to 350°F. Lightly grease a mini muffin pan with non-stick cooking spray. Set aside.

    Step 2: In a large bowl, stir together the flour, oats, baking powder, baking soda, and cinnamon. 

       Step 3: Make a well in the center and add the mashed fruits and veggies. Stir until well combined.

    Step 4: Divide batter evenly among the 24 mini muffin cups. Bake for 12-14 minutes until set.

    Step 5: Store in an airtight container in the refrigerator for up to 7 days.

      I have a toddler who loves bread type snacks but doesn't love to many veggies, this has her name written all over it. Thank you so much for the great idea, these would be perfect as either a breakfast or after nap snack.
