There is something about a Grilled Cheese Sandwich that transports me back to childhood. I think grilled cheese was on a regular rotation at our home growing up. My mom did not love to cook, so now as a parent who is responsible for feeding my family at least 3 meals a day, I totally get why grilled cheese was always on the menu.

I will share a couple of hacks that will make this elevated grilled cheese take just minutes to prepare. And with only 5 ingredients it is a win-win.

My first hack is for the Breakstone's® Butter. I placed it in the microwave for about 20 seconds, and then I pour the butter over the bread instead of spreading it. This was so I did not end of with holes in the bread instead of spreading it. If you don't want to use a liquid butter, you could heat it for less time so it is just softened. Using Breakstone's® Butter with your grilled cheese is better than using oil or spray because of the flavor it adds to the sandwich.
My second hack is use rotisserie chicken instead of cooking fresh chicken. I used about quarter of the rotisserie chicken for each sandwich, but you could make each chicken go further by adding less chicken or you could add more. Shred the chicken while it is still warm. I find it much easier to shred before you put it into the refrigerator. For this sandwich, I shredded the chicken a couple of days before I cooked the sandwiches, so it works to keep the chicken in a plastic bag until you are read to enjoy it. Bonus: you can throw away the huge container giving you more room in your refrigerator.
To ensure that the cheese melts and you end up with a sandwich with lots of melty goodness, place a slice of Borden® Cheese on both sides of the bread and cook the bread separate until the cheese starts to melt. Then, you can combine both pieces to make you grilled cheese. Borden® Cheese makes all the difference with the perfect melt affect you can't deny.
When cooking the grilled cheese sandwich in your pan, make sure you are using a medium to low heat. Full disclosure: I burned the first one I made to a crisp. Oops! I think it happens to all of us every once in a while. We have a gas oven so everything heats up faster - even bread. The goal is to allow the cheese to melt while getting the perfect golden-brown coloring. For the last couple of minutes, I turned the heat off, covered the pan, and let the sandwich sit so the cheese could finish melting.
My last tip is that real good ingredients means really good grilled cheese. Buffalo Chicken Grilled Cheese
Ingredients
- 1 large Rotisserie chicken 2 large boneless skinless chicken breasts cooked and shredded
- Buffalo sauce to taste
- 8 slices Borden® Cheese
- 8 slices Bread
- 2-3 Tablespoons Breakstone's® Butter at room temperature
Instructions
- Place the shredded chicken in a bowl and add buffalo sauce. Mix until all the chicken is completely covered with sauce.
- Spread butter on one side of each slice of bread.
- Place the butter side of your bread down on your pan. And add a piece of cheese to both sides of the bread.
- Top chicken on one side of the sandwich.
- Heat a large skillet over medium heat.
- Cook the bread for about 4-5 minutes or until cheese has started to melt. Then combine to make one sandwich. Flip when golden brown.
- Cut your grilled cheese in half and enjoy!
