This decadent breakfast bowl has all the comfort of homemade apple pie paired with the fresh tasting flavor of smoothie bowls.
We are still recovering from our unexpected evacuation from Hurricane Irma. Thursday night before the storm we were planning on staying and weathering out the storm in our home. We started to get a little freaked out when our favorite plaza and all the restaurants were closed. We finally found a restaurant that was open. During our meal a couple of friends from our neighborhood posted that they heard on the news we were in a mandatory evacuation zone. The app for our county listed our address as one that needed to evacuate. When I went to bed I thought we are totally prepared for the storm so we would stay.
As the night went on I started to read more and more articles about storms with kids and the impact of hurricanes. I also saw more photos from islands impacted from the storm and my nerves got the best of me. At 5am my best friend was texting me. Her flight out of Florida was canceled and she was driving to Atlanta (a 12 hour drive) to try and get on a new flight. She encouraged me to get in the car and go. So I woke my hubby up and told him we had to go. I packed us as my hubby finished putting up the shutters. I added towels to all our windows, placed our important items in the dishwasher (to protect from water) and grabbed our sentimental items and we got into the car.
When we left we had no idea where we were going besides North. We had a couple of offers from Atlanta, but the storm was projected to hit them too. So we texted a friend in Louisiana and they offered for us to stay with them. What we did not know was that they already had two other families coming. So we had 8 adults, 8 kids and 4 dogs. It was a real hurricane party! We might have had dessert with every meal.
Coming home we were ready for to get back to normal and back to eating more fruits, veggies and whole grains. I am excited to share a yummy recipe for an Apple Pie Smoothie Bowl. This was my first time making a smoothie bowl. Making smoothie's is my daughter's favorite thing to make. We have an entire drawer in our freezer, well we did before the storm, we need to restock it now, dedicated to smoothie ingredients. I love the idea of a bowl because it make it feel like a meal instead of a drink. I see lots of smoothie bowls in our future.
