When I was in high school my mom and I made the decision to become vegetarians, in my post about DIY Asparagus Candle Centerpieces I shared how we still do Meatless Mondays. We experimented with every vegetarian brand we could find. We had some may misses like our Tofu Turkey for Thanksgiving. No one in our family has forgotten that holiday. We were lucky to find some amazing products, most of them were by MorningStar Farms®. Fast forward 7 years later I was on a flight to Germany to visit friends and I started to freak out about being a vegetarian in a country where I did not speak the language. I was also worried about insulting my friends parents if I did not eat their cooking. I decided it was time to go back to eating meat. As I added meat back into my diet I vowed to continue to try to include more vegetables and vegetarian meals in my diet. Here are some of my favorite ways to get more vegetables:
Today, with a family of my own I include vegetarian products as a part of our weekly meals. We also serve them at our BBQs for events like Labor Day and football celebrations. They are are a convenient and delicious "as-is" meal solution. I don't think my daughter even realizes that they are vegetarian options.
With Labor Day approaching it is time to get ready for my favorite season, fall, AKA football season. My husband recently installed a big screen TV on our patio so we can watch the game outside, even from the pool. This weekend we tested out a new recipe: Mango Salsa and paired it with MorningStar Farms® Spicy Black Bean Burger Value Pack, America’s #1 Veggie Burger and MorningStar Farms® Original Chik Patties. This was my first time grilling the Veggies Burgers. And know I know why they said you need to grill it to believe it! Mango Salsa
I love this recipe because it is so easy, flavorful and colorful. It is perfect for an appetizer by itself or with chips. It is also great as a topping on anything from veggie burgers to chicken.
What you Need for Mango Salsa
- 2-3 Ripe Mangoes - Pealed, pitted and diced
- 1 Red Pepper - Chopped finely
- ¼ Red Onion - Chopped finely
- Lime Juice of 1 Lime - 1-3 Tablespoon of lime juice
Optional
- 3 tablespoon fresh cilantro leaves, chopped
- Jalapeno - seeded and chopped finely
- Salt to taste
How to Make Mango Salsa
- Peel, pit and dice your mangoes.
- Finely chop the red pepper and onion.
- Mix all mangoes, red pepper, red onion and the juice of one lime together.
- Serve and Enjoy!
