I feel like every fall my Facebook is filled with hysterically true memes about how every parent dislikes the time change. With a 5 year old and a 50lb dog we are no different. So, to prepare for super sleepy morning I have started prepping breakfast the night before with these yummy Blueberry Overnight Oats. We also love to make these Cinnamon French Toast Muffins
Overnight oats are a no-cook method of making oatmeal. Instead of cooking your oats with water or milk on the stove or in the microwave, you mix old-fashioned oats, also called rolled oats with the liquid and other toppings. Then you place it in the refrigerator overnight. Overnight the oats soak up all the liquid. You can eat them cold or heat them up. The most common mixture is equal parts raw rolled oats, milk and yogurt (I like ⅓ or ½ cup of each). We like a little more milk and less oats. You can use any kind of yogurt or milk.
This week we tested out a bunch of different recipes to determine which ones our family liked the most. B is all about overnight oats now. She asks me to make them everyday. ¼ cup old fashioned rolled oats
⅓ cup coconut milk
1 teaspoon honey
¼ cup nonfat Greek yogurt - plain or vanilla
½ Tablespoon chia seeds
¼ teaspoon vanilla extract
¼ cup blueberries

These look yummy and so easy to make! I live in Arizona where we don't turn the clocks back but it is darker earlier here too. Park time after dinner is usually in the dark and that also makes me nervous. #client
