I am always trying to get my family to eat my veggies. This recipe is so yummy everyone from my husband to my kids forget that they are eating zucchini. If you want the flavor of pizza, but don't want the carbs these zucchini pizza bites taste like pizza without the bread.
Ingredients to make Low-Carb Zucchini Pizza Bites
They are so easy to make partly because there are so few ingredients
- Fresh zucchini - that you will slice thinly.
- Tomato sauce - you can use your favorite.
- Mozzarella cheese
- Optional - Your favorite pizza toppings

How to Make Zucchini Pizza Bites in the Air Fryer
- Wash and dry the zucchini
- Cut the zucchini into thin slices.
- Put parchment paper at the bottom of the air fryer and spray with cooking spray.
- Preheat the air fryer to 350 degrees for a couple of minutes.
- Add tomato sauce to each piece of zucchini. Then top with cheese and your favorite toppings.
- Cook at 350° for 5-7 minutes. they will be very warm so use tongs from the air fryer using the tongs to remove the pizza bites.
Substitutions
We love making these because you can customize the pizza bites to everyone's favorite flavors all at the same time. Here are some topping ideas:
- Vegetables like onions, peppers, tomatoes, olives, mushrooms, basil
- Protein - Extra cheese, ham, pepperoni, sausage, chicken, BBQ chicken, salami.
Variations
If you want the zucchini to be more crispy I recommend pre-cooking the zucchini for 4 minutes at 350 degrees in the air fryer.
Storage
The Zucchini Bites really need to be eaten right away. I don't recommend storing them. I have stored them before in an air-tight container in the refrigerator. You can reheat them in the air fryer for 3-5 minutes.
Top Tips for Air Fried Pizza Bites
- Pre-heating your air fryer will help your food cook evenly, but if you don't have time or forget don't worry they will still cook well.
- I love using parchment paper or aluminum foil in the air fryer for easy clean-up. If you don't have any make sure you at least use a spray. You can use your favorite spray.
- Cooking time may vary depending on your air fryer.
