Fajitas are one of my favorite foods. I used to only order them out at our favorite Mexican restaurant. I thought I would not be able to recreate them at home. Since I started meal prepping this year with recipes like Low Carb Shrimp Zoodle Alfredo, Chicken Broccoli Sweet Potato Sheet Pan, and Turkey Stuffed Pepper I have wanted to eat more and more meals at home. There is something about knowing everything that is in your food. I knew I had to find a way to make them at home.
Everyone in my family likes their fajitas with different toppings. Since I was a child my parents instilled in me the importance of never putting food containers on the table, thank you, Ms. Manners. I love these Rubbermaid® containers for meal prep and for allowing me to put them directly on the table so everyone can fix them. And now we can enjoy Fajita Night!
How to Prep for Fajita Night
Sunday night is my prep day so I chop up all the peppers, onions, and chicken breasts. I store them in separate containers because I like to snack on the peppers before cooking them.
I also store cheese, sour cream, and salsa in the containers in smaller-sized containers.
When you are ready to bake your fajitas. Preheat the oven to 400 degrees. Place aluminum foil on top of a cookie tray. Fill the tray with your pre-cut peppers, onions, and chicken.
Mix them together and add your fajita seasoning, I use store-bought, but you could mix your own.
Let it cook for 30-40 minutes. Stir once halfway through baking.
Once the chicken, peppers, and onions are cooked it is time for the fun. Everyone gets to prep their own fajitas. Simply place the topping on your counter or table and let your friends and family add their favorite toppings.

How to Prep for Fajita Night
Ingredients
- 1 large onion
- 3 Peppers Can use Green, Red, Orange or Yellow Peppers
- 1 lb chicken breast
- 1 packet Fajita seasoning
Instructions
- Preheat the oven to 400 degrees.
- Cut the onions, peppers and chicken into stripes. And place them together on a foil lined pan.
- Sprinkle the seasoning over the meat and vegetables.
- Bake in the preheated oven for 35-40 minutes, stirring once half way through.
