    Chicken Caprese Sandwich Recipe

    Last night we tried a new tomato sauce Prego® Cooking Sauces Tomato & Fresh Ricotta.  And it is now a new family favorite. With this product there is no reason to wait for pasta night to bring everyone around a delicious Prego family meal. Because all you need is some fresh chicken, 20 minutes, and Prego Cooking Sauce to create your family’s new favorite meal – pasta optional.

    You simply brown chicken in a pan for 5 minutes in oil.  Then, pour the entire jar on top of the chicken and simmer for about 15 minutes or until it is fully cooked.  You can chop up the chicken before or after it is cooked.  For dinner I served the chicken over zoodles with mozzarella.  It was so delicious, we will be adding it to our weekly rotation.

    One of the perks of working from home is that I get to enjoy leftovers for lunch. The chicken was so tender and delicious I could not wait to try it again.  Today I made a new spin on one of my favorites: at Hot Chicken Caprese Sandwich.

    This recipe is so easy and yummy.  I made it again for dinner and my family loved it.  You could make it in the toaster oven or in a pan.  I made it in a pan.  This recipe combines one of my favorite summer salads, the caprese, with the deliciousness of a grilled chicken tomato and ricotta sandwich! To get the cheese to melt I turned the heat to low and added a lid to the pan until the cheese melted.  See the full recipe below. Chicken Caprese Sandwich

    Ingredients

    Tomato & Ricotta Chicken

    • 1 jar Prego® Cooking Sauces Tomato & Fresh Ricotta
    • 3 breasts Chicken
    • 1 Tablespoon Oil

    Sandwich

    • 2 slices bread
    • 4 pieces basil
    • ¼ cup tomato & ricotta chicken mixture
    • Butter
    • 3 slices mozzarella

    Instructions

    Tomato & Ricotta Chicken

    • Add oil to a pan over medium heat.
    • Add chicken breast and brown both sides for about 5 minutes
    • Pour the entire Prego® Cooking Sauces Tomato & Fresh Ricotta on top of the chicken and let it simmer for 15 minutes or until the chicken is fully cooked.

    Chicken Caprese Sandwich

    • Butter one side of each piece of bread and place the buttered side down on the pan.
    • Layer on cheese on both sides of the bread.
    • Add Tomato & Ricotta Chicken to one side of the bread
    • Cook until both sides of the bread of lightly toasted. Add the basil . Then put both slices of bread together.
    • Turn the heat to the lowest and add a cover until the cheese melts.
