Jimmy Dean® Fresh Roll Sausage is a favorite in our house. My husband and I love having house guests because I always make egg casserole with Jimmy Dean Sausage for breakfast. It is one of my go to recipes because first it is delicious and everyone loves it and second because I can make it the night before and then all I need to do in the morning is pop it in the oven. Roll sausage is versatile and easy to prepare. I recently shared a recipe for Minestrone Soup in the crock pot. It has been read over 20,000 times in less than 2 months. More important than that my family loves it. So it inspired me to make this Sausage Soup with Pasta and Veggies in the Crock Pot. We went to Walmart to get all the ingredients we need including the sausage in the refrigerated section.
I love using my crock pot. Simply add everything into the crock pot and walk away. That is my type of cooking. This soup is packed with sausage, onions, tomatoes, corn, carrots, spinach with the perfect seasonings. It is a meal your entire family will love and enjoy! Two times last night my daughter said "Mom this soup is so good, you should make it again." Her excitement about our meal made my night. This recipe makes a lot of soup and like tomato dishes it seems to get better and better with time.
Ingredients for Sausage Soup with Pasta and Veggies in the Crock Pot
Part 1
1 tablespoon olive oil
1 cup chopped yellow onion
2 teaspoons freshly minced garlic
1 (16-ounce) package Jimmy Dean® Fresh Roll Sausage
Part 2
2 cups water
1 (28-ounce) can diced tomatoes
4 cups chicken broth
2 cups peeled and sliced carrots (about 2 large carrots)
1-½ cups fresh or frozen corn
2 teaspoons Italian seasoning
½ teaspoon kosher salt (more or less, to taste)
¼ teaspoon freshly ground black pepper (more or less to taste)
Part 3
1 cup small cut pasta
2 cups tightly packed fresh baby spinach

How to Make Sausage Soup with Pasta and Veggies in the Crock Pot
In pan, heat olive oil over medium high heat. Then sauté your onions for a couple of minutes. Add garlic and saute for another minute. Add in your sausage cook until it is browned.
Combine water, diced tomatoes, chicken broth, carrots, corn, and Italian seasoning to your slow cooker. Add in salt and pepper to taste. Cook on low heat 6-8 hours or high 3-4 hours.
Then add in pasta, spinach and cook on high heat for an additional 20- 25 minutes until pasta is tender.

- 2 cups carrots peeled and sliced
- 1-½ cups corn fresh or frozen
- salt and pepper to taste

- 2 cups baby spinach tightly packed
