I love muffins and when I gave up flour, I was sad that I had to give up muffins. I was super excited when I found out that you can make muffins with oats. They are one of my favorite things to eat for breakfast. And the breakfast I travel with so I know I will start my day off right. They are perfect to grab and go especially when we are traveling and just want to get out the door. These blueberry banana muffins are great for breakfast or snack time! My whole family loves them, which makes this mom happy that they are enjoying a sugar and flour free food!

- Blueberries

How to Make Banana Blueberry Oatmeal Muffins
- Preheat the oven to 370 degrees.
- Mash the bananas
- Add in all the ingredients and mix as you add them with oats and blueberries as the last two.
- Pour into a greased muffin pan.
- Cook for 30 minutes.
- Cool muffins for 10 minutes in the muffin tin, then allow to cool fully on the cooling rack.
Substitutions
- Almond Butter - If you like almond butter better this recipe works just as well with it. I use which everyone I have in the pantry.
- Tahini - You can also swap out peanut butter for Tahini. Tahini is a paste made from sesame seeds and is a staple in many cuisines, especially in the Mediterranean and the Middle East. It’s vegan, gluten-free, tastes nutty, and is simple to make.
- Black Sesame seeds - I have swapped out poppy seeds with black sesame seeds.
- Poppy Seeds – You don’t need them, but I like the texture and extra fiber.
Add-Ons
Want to switch things up? You can add in ⅓ of a cup to a ½ of a cup of any of these.
- Chopped Nuts - We love cashews, almonds or walnuts.
- Unsweetened Shredded Coconut
- Chocolate Chips - dark, milk or white chocolate chips
Ingredient variations
- Cherries - I swapped out the blueberries for cherries and the muffins were delicious.
- Apples - I have also swapped out the blueberries for apples. leave the skip on and chop them into bite size pieces.
- Vanilla Extract - If you don't have almond extract you can use vanilla extract instead.
Equipment
- You can use any size muffin tins. I have not made them as minis yet, but they would be good as a mini too. We make them as normal sized muffins and these large muffins. I like the large one's best because 1 large muffin is 1 serving.
- You bake them in your oven.
Tips for Making Banana Blueberry Oatmeal Muffins
Fresh Peanut Butter
When I started to eliminate sugar from my diet, I was shocked to learn that many store bought peanut butters have sugar. I love that Sprouts has the option to make fresh almond and peanut butter. It is one of B's favorite things to do at our local Sprouts. If you don't want to make it yourself, they have containers that are already filled for you.
Fresh or Frozen Blueberries
You can use fresh or frozen blueberries for this recipe. I like to use frozen blueberries since I generally buy them in bulk. When using frozen blueberries don’t thaw them. Put them into the batter last so that they don't bleed into the batter too much.
Tips for your Bananas
Spotty bananas work best for this recipe because they are sweeter and mash more easily.
Can you freeze bananas?
Ripe or even overripe bananas are the key to making these muffins sweet without any sugar. If you have bananas that are overripe you can put them in your freezer until you want to use them for muffins, bread, or banana chia seed pancakes.
- Freeze them whole.
- When you are ready to use them, microwave them for 45 seconds.
- Remove the fruit from the peel and mash the bananas for the recipe.
Note: The peel will turn black and look unappetizing, but the inside is soft, sweet, and perfect for baking.
Are these muffins dense?
Baked goods like these muffins that are made with oats can come out fairly dense. The best way to avoid them being too dense is to not over mix them.
The more you mix, the denser it will be.
So, when you add the oats to the wet ingredients, make sure you only just combine it, and then gently fold the blueberries into the batter.
Cooling the Muffins
Take the muffins out of the pan to allow them to cool after about 10 minutes. You will want to transfer them to a cooling rack, not in the muffin pan.
Should I use the oats whole?
I use whole oats because I don't want to have to clean up any other equipment. If you don't like the texture you can grind your oats into a powder with a blender.
What type of oats should I use?
You can use either old-fashioned rolled oats, quick oats, or oat flakes for these healthy oatmeal muffins. I do not recommend using steel-cut oats.
Storing Banana Blueberry Oatmeal Muffins
These muffins can be kept at room temperature in an airtight container for 5 days. I generally keep them in the refrigerator and then heat them when I am ready to eat one.
You can then put it in an airtight container or bag for up to 3-6 months. Allow them to cool before you place them into the freezer. When you are ready to eat them, simply remove from the freezer and microwave for 30 seconds to one minute for a quick and easy breakfast.
