Recipe for Cinnamon French Toast Muffins – Gluten-free

A couple of months ago I had lunch with a friend from high school who is also a blogger at Celiac Mama.  She shared her adventures of being a mom to a toddler with celiac.  It was a really eye-opening lunch.  My previous experience with gluten sensitivity had been with a couple of friends who were all diagnosed as adults.

I learned that some non-food items, like play dough, have gluten.  And that hand sanitizer does not remove gluten from your hands.  And that people with celiac or gluten sensitivity could be affected by accident with cross-contamination.

I walked away with three big lessons.

  • First, a new awareness that when I entertain or provide snacks at a playdate, especially with kids, it is so important to know if anyone has any food restrictions. Since my daughter does not have any I rarely thought about it before.
  • Second, I have an even greater love of blogging. We are able to share such great resources to help solve problems that have worked for us.
  • And third, an appreciation for my friend and all families who struggle with food allergies. It is a constant struggle to maintain a gluten-free lifestyle.

The part that I will never forget is my friend sharing that the day after a birthday party they have a “say yes day” where they get in the kitchen together and try to create any food that was at the party that she could not eat.  While she always calls the host to find out what food will be served so she can try and bring similar items for her daughter, sometimes there are other things that include gluten that her daughter still cannot eat.

When the opportunity to work with Udi’s and Glutino came up, I jumped at the chance.  I channeled my friend from Celiac Mama and thought if I could not eat gluten, what would be one of the things I would miss the most?  All my favorite breakfast foods came to mind.  A gluten-free lifestyle would be hard to stick to, but products like these help make it easier.  The second our daughter got home from school, she immediately asked me what I was making because it smelled so good.  These Cinnamon French Toast Muffins are so amazing. french toast, gluten free breakfast, gluten free bread, cinnamon french toast, french toast muffins

Where to Find Ingredients for Cinnamon French Toast Muffins

We went to our local Safeway.  They have an impressive selection of gluten-free foods.   Udi’s White Sandwich Bread is light and fluffy and made without added fillers. It can be found in the frozen gluten-free/specialty section.

Glutino products can be found in the specialty snacks section and frozen gluten-free/specialty section.  We also bought Glutino Pretzel Twists and Crackers.  Right now, you can save $1 on Glutino and Udi’s products at Safeway using this digital coupon. It is a great time to stock up!

Ingredients for Cinnamon French Toast Muffins french toast, gluten free breakfast, gluten free bread, cinnamon french toast, french toast muffins

For Muffins:

1 Loaf of Udi’s White Sandwich Bread (cubed)

1-1/2 Cups of Milk

4 Eggs

½ Cup White Sugar

2 Tsp Vanilla

1 Tsp Cinnamon

For the Topping:

½ Cup Butter (cold)

½ Cup Brown Sugar

½ Cup Coconut Flour (or All Purpose Flour if you do not have gluten sensitivities)

1 Tsp Cinnamon

How to Make Cinnamon French Toast Muffins

Spray muffin tin.

Combine bread, milk, eggs, sugar, vanilla and cinnamon in a bowl until the bread is fully coated with the mixture.

Scoop bread/egg mixture into the muffin tin.

Cover and refrigerate for at least 2 hours. I personally try to  prep it the night before so they can soak overnight.

Preheat oven to 350 F and make the topping by combining butter, brown sugar, flour and cinnamon.

Sprinkle the topping over the top of each of the muffins.

Serve with syrup or plain and ENJOY.
