A couple of years ago the University in our town got a football team. It was a huge deal. For the first couple of years they were terrible. We still went for the experience and the food!!! This year they recruited an amazing coach, had a winning season and won their first bowl game. The excitement and ease of having a football program just minutes from our home has reinvigorated our love for not only football, but also tailgating or homegating. I am excited to partner with RO*TEL to share this super easy no bake Chicken Taco Cups. Both their original and mild versions are staples in our house. They are the perfect dish for your football celebration, especially for since it is Bowl season.
Chicken Taco Cups
There are two ways you can make these Chicken Taco Cups, depending on if you will have access to electricity when you are tailgating. If we are tailgating at home I cook everything in the crock pot. Simply add four chicken breasts, a block of cream cheese and 1 can of RO*TEL® Original Diced Tomatoes and Green Chilies and cook on low 6-8 hours in the crock pot. Or if you want a no bake way and want to switch things up you can make it as a cold dip. This is my favorite way if we are tailgating. It is even easier and saves you so much time. Every week we buy at least one rotisserie chicken. It is the perfect meal starter and all the cooking is done for you. All you need to do is mix the ingredients together.
Does it get any easier than that? And in our house it is all about the toppings. I like to setup a toppings bar so everyone can pick their favorite way to finish off their chicken taco cups. You can eat them with a fork or with chips as a dip. My favorite way to enjoy it at home is over a salad.
Ingredients for Chicken Taco Cups
- 1 can RO*TEL® Original Diced Tomatoes and Green Chilies – drained
- 1-2 rotisserie chickens – shredded
- 1 cup shredded cheese
- 8 oz cream cheese, softened
- 1 taco seasoning packet
- corn – drained
- black beans, drained & rinsed
- shredded lettuce

- sour cream

Instructions for Chicken Taco Cups
- Mix chicken cream cheese, shredded cheese and taco seasoning, in a bowl.
- Add chicken mixture into the bottom of a cup
- Garnish with corn, beans, tomatoes, cheese, and sour cream.
